- 1 can (15 ounces) of chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 piece cucumber, diced
- 1/2 piece red onion, thinly sliced-
- 1/2 Cup Kalamata olives, pitted and halved-
- 1/4 Cup fresh parsley, chopped-
- 1/4 Cup crumbled feta cheese
- 3 tbsp olive oil-
- 2 tbsp lemon juice-
- 1 clove garlic, minced-
- 1 tbsp dried oregano-
- 1 Salt and pepper to taste
In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
Pour the dressing over the salad and toss gently to combine. Adjust seasoning if needed.
