Roasted Carrots

Ingredients

  • 1 lb (450g) baby carrots
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp cinnamon (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Carrots: Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, cinnamon, salt, and pepper in a bowl.
  2. Roast: Spread carrots on a baking sheet and roast for 20–25 minutes, turning halfway through, until tender and caramelized.
  3. Serve: Garnish with fresh parsley if desired. Serve warm as a festive side dish.
