Garlic Butter Roast

Ingredients

  • 1 (5–6 lb) prime rib roast
  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp coarse salt
  • 1 tsp black pepper

Instructions

  1. Prepare Roast: Preheat oven to 450°F (230°C). Pat the prime rib dry with paper towels.
  2. Make Garlic Butter: Mix butter, garlic, thyme, rosemary, salt, and pepper. Rub the mixture evenly over the roast.
  3. Roast: Place the roast in a roasting pan with a rack. Roast for 25 minutes, then reduce the temperature to 325°F (165°C) and cook for 1 1/2–2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare.
  4. Rest and Serve: Let the roast rest for 20 minutes before slicing. Serve with au jus or horseradish sauce.
